A Shuwan Sake Evening at USHIO
Shuwan × USHIO, 28 September 2026
On Monday 28 September, we hosted an evening of sake and wagyu at the USHIO counter with Mr Takeyasu Shojima, founder and representative of Shuwan, the Fukuoka-based maker of vessels designed for sake, who joined us at the centre of the counter.
The evening opened with a comparative tasting: the same sake poured into different vessels, revealing how shape and material change its aroma, texture and finish. From there, we served our five-course wagyu tasting course, each dish paired with sake from Fukuoka breweries. Mr Shojima introduced every pairing, sharing the story of each bottle as each course arrived.
The pairings:
Wagyu Yukhoe – Niwa no Uguisu Junmai Ginjo
Roast Beef – Miinokotobuki Yamahai Junmai Shinjo
Ox Tongue Salt Grill – Miinokotobuki Yamahai Junmai Nigori
Wagyu Sirloin Yakisuki – Niwa no Uguisu Daruma Tokubetsu Junmai
Matcha Gateau Chocolat – Niwa no Uguisu Tokusen Umeshu
Each guest took home a Shuwan ceramic tasting cup as a memento of the evening.
Our thanks go to Mr Shojima and Shuwan, to the breweries behind Niwa no Uguisu and Miinokotobuki, and to everyone who joined us at the counter.
